Ayurvedic Recipes - Rice Soup

Delicious ayurvedic rice soup.

Ayurvedic meals are rarely served without rice. There are several reasons. Rice is a staple food in Asia. It is also very versatile, and goes well with both sweet and salty foods. Here, the rice is always combined with other ingredients such as spices, vegetables etc. and rarely eaten alone.

The Recipe

The Ingredients for 2 large portions:

300 g of basmati brown rice

2 zucchinis

water (five times the amount of rice)

2 tablespoons of ghee

1 small piece of ginger 

¼ teaspoon pepper ground

¼ tsp of pippali powder

rock salt

Method:

Wash rice and vegetables. Place rice and water in a saucepan and add a small amount of salt. Bring rice to boil and and then simmer over low heat for about 40 minutes.

In the meantime, cut the zucchini into thin slices and ginger into small pieces. Heat the ghee in a pan and fry until cooked, continuing to stir regularly.

Add the fried zucchini and ginger to the cooked rice, stir and enjoy.
