Ayurvedic Cuisine - Beet & Walnut Dip

This week we would like introduce a classic, ayurdevic dip that goes best with grilled veggies and meat.

The three main ingredients are nuts, beetroot and ginger. 

Botanically speaking nuts are classified as fruits. They are very high in calories but extremely healthy. They contain many valuable nutrients such as healthy fats, protein, complex carbohydrates and fiber. Nuts protects the cardiovascular system and can even prevent diabetes.

Beetroots are a true superfood. In addition to vitamins and minerals, they are rich in phytochemicals, and protect the heart and vessels. They also contain folic acid. Recent research indicates that they could enhance your mood.

Ginger has been used in Asia for thousands of years as a remedy and cooking alike. It has anti-inflammatory and analgesic properties, and stimulates digestion. Ginger has a wonderfully spicy yet sweet flavour that refines many different kinds of dishes.

The Recipe

Ingredients:

50 g nuts

2 Beetroot (fresh)

1 piece of ginger (fresh)

½ tsp black pepper

1 tsp sesame paste

A dash of lemon juice

Preparation:

Toast the nuts briefly in a pan for their full flavour to develop. Meanwhile cook the beetroot in salted water until soft. Finally place the nuts, beetroot and ginger in a blender and blend until smooth.
