Cinnamon has been used in countless ways over the centuries. Cinnamon was used in embalming the deceased, as an incense, as an aphrodisiac, in aromatherapy, as a spice and in herbal medicine. Cinnamon as a spice is considered a true classic and is very popular all over the world. Its characteristically sweet smell enchants our noses. It is a highly aromatic bark and the thinner it is, the finer the aroma. Its typically sweet and spicy taste is particularly popular in baked foods such as cakes and cookies. Ayurveda states that cinnamon has the properties of pungent, bitter and sweet and is particularly valuable for Kapha and Vata. There are two varieties: Ceylon and Cassia.
