Jerusalem artichoke is an ancient crop originally cultivated by Native Americans and has been grown in Central Europe for around 300 years. In the 19th century, the tuber of the Jerusalem artichoke plant was considered an important food source. Due to its close relation to the sunflower, it is also known as the “sun tuber”. With its pleasant, nutty flavour, the Jerusalem artichoke tuber contains around 40% inulin – a soluble, indigestible carbohydrate. Inulin is stored in many plants as a reserve substance. Unlike starch, inulin is made up of multiple fructose units, which the plant can use as an energy source when needed.

Recommended use:
Stir 3 teaspoons (4 g) daily into a drink of your choice (for example, soy or oat drink) and drink. You can also replace a portion of regular flour with this Jerusalem artichoke powder in baking recipes or stir it into soups and mueslis.

Ingredients for 2 people:

• 3 tbsp almond butter
• 3 tbsp sunflower oil
• 1 tbsp Raab Organic Jerusalem Artichoke Powder
• 1 tbsp cocoa
• 1 tsp vanilla powder (or to taste)

Method:
Mix the almond butter with the sunflower oil until smooth; stir in the Jerusalem artichoke powder and cocoa. Flavour with vanilla powder to taste. Serve!
