The birch is a symbol of spring. The young leaves are collected during the months of May and June and are dried. Their scent is aromatic and the leaves have a slightly bitter taste. They are used mainly for spring soups and stews.
For a wholesome tea, pour 1/4 liter of boiling water over one teaspoon of tea. Cover and steep 3 to 5 minutes.
