Tannins are a type of secondary phytonutrients which, as the name suggests, have tanning and astringent properties. Tanning agents have been used for tanning animal hides for a long time. Tannins are found in wood, leaves, seeds and fruits. A few examples of this are the wood of the elder tree, hazelnut leaves, the seeds of the Agrimonia eupatoria (a species of agrimony) and raspberries (fruit).
