Flavonoids are water-soluble and, in addition to tannins, mucilage, bitter substances, etc., are a type of secondary phytonutrients. They are considered natural substances and are responsible for the majority of colours in flowers. Flavonoids have innumerable tasks in plants (protection from being eaten, attracting insects, protection from UV radiation ...). Examples of plants containing flavonoids are arnica flowers, ginkgo leaves, elder flowers, milk thistle fruits and marigold flowers to name just a few.
